Summer is here, and that means pool days, outside fun, popsicles and ice cream! I want my child to enjoy all the fun that life and summer has to offer. However I want to cut out some added sugars if and where I can. Trust me when I say I am not a perfect Mom by any means. These popsicles are just perfect for that!
We love Coconut Water in this house. The regular one and the pineapple flavored one. I had popsicles molds to try some different recipes through the summer and I thought why not use Coconut water as a base, and from there these popsicles where created and my sweet tiny human loves them.
Coconut Water- amount will depend on your molds
Fresh or frozen fruit
Popsicle Molds ( You can find them here or also these that are disposable. )
I had tons of fruit in the fridge so we used pineapples, strawberries raspberries and black berries. Start with chopping up your fruit. I chopped mine up pretty small because I wanted my toddler to be ok with it, and my molds were pretty small. New molds have been ordered for more popsicles!
Add fruit into each one, then coconut water, more fruit at the top. Take a utensil and mix them a bit so hopefully the fruit will spread out. It really did not take a whole lot of fruit to fill these guys up pretty well. After you fill them up, add in the sticks and they are ready to go in the freezer. Make sure to freeze them for a good 24hrs.
Grab them out of the fridge on a hot day for a yummy treat and enjoy. These are not only a much healthier option, but they are also super hydrating because of the electrolytes in the coconut water. Also Mamas out there they are so great for teething. We absolutely love these popsicles and I can’t wait to try lots of new fun recipes this summer, and of course I will be sharing them!

The warm weather sets in and I honestly just crave fresh fruits. I have a bit of a sweet tooth and fruity things tend to help settle that a bit If you follow me over on Instagram ( and if you don’t you should at @magicallymegan) You would know I have found a new love for Acai Bowls. There is a new or new to me local food truck that has made me fall in love with this healthy and delicious treat called Buoy Bowls and if you’re in the Triangle area of North Carolina you should definitely check them out. They are out my way once a week so we have made it our weekly Thursday treat. They are so good even my one year old loves them.
I find myself craving these many other days of the week as well, but I can’t often drag my toddler to the other side of town, and well they don’t really fit into my Mom budget more than once a week so I have started to create them at home. It is fun to change-up the way you mix things in, the fruits you top them with etc.. Today’s recipe is my favorite one to make at home. You will need Acai packets ( Sambazon are my fave and can be found in the freezer section at most groceries) coconut water ( you can also use almond or coconut milk but I prefer the coconut water) , a banana, a little frozen fruit, some granola, and fruit for topping.
Run your Acai packet under water to get it break and add to blender, then add 1/4 cup Coconut Water, about 1/4 frozen fruit and half of the banana. Make sure your banana is at the bottom of the blender, I add my banana last because the top is the bottom once I flip my blender. This helps everything else blend easier. Pour the mixture into the bowl, top with the granola, and then the fruit and enjoy.
Acai has tons of greats benefits, one being an antioxidant, so its great for heart health. They can help boost your energy and even your immune system. So head to the store and buy some Acai packets to enjoy this delicious healthy treat all summer long, and find a local place that makes them and enjoy that way too!
Cinco De Mayo is just around the corners so what is better than a good Margarita recipe?! In college I loved a good margarita. Mostly frozen ones. I remember my girlfriends and I making them on many many occasions. These days, I would much prefer a nice on the rocks Margarita with a top shelf tequila. The kinds I couldn’t afford in my college days. With warmer weather here and summer just weeks away I wanted to create a little bit healthier ( I didn’t say it was healthy, just healthier) that would be a great summer go to for those Taco Tuesdays, or get togethers with friends.
I have been super obsessed with pineapple coconut water lately. Lets be honest, I am just obsessed with all things Pineapple period, enough said. I cant seem to like drinking regular coconut water, so when I saw this I knew I had to try it. It was love at first sip. When I wanted a new margarita recipe I knew I wanted to use it in this! However you could totally use regular coconut water as well, I don’t think it would change the taste. So here is what you need.
1 bottle 16 oz bottle of Coconut water
1 Cup Orange Juice ( I used pulp free Simply orange)
1 cup water
1 Cup fresh squeezed lime juice
1.5 cups of a white tequila ( I used 1800 Silver)
1/2 cup of Triple Sec
Agave to taste
Mix all ingredients together in a pitcher and let it chill. To be honest the longer it sits the better it gets. This recipe can easily be doubled for a larger party size pitcher but it made about 6- 80z servings. Rim you glass with salt and fill with ice. Pour in the margarita and enjoy!
