Disney Parks Inspired Mickey Rice Krispy Treats

One of my all time favorite Disney treats are their Rice Krispy treats. I don’t know what the secret is but they are just so good! You can get rice krispy treats in the park in a variety of shapes and sizes. I mean have you ever seen the giant mickey head rice krispy treat? I love how the designs can change from season to season. When we did our Magic Kingdom inspired date night, you can see the details here, I knew these yummy treats just had to be a part of it!

To make these treats you will need :

3 tbs of butter

1 bag of marshmallows ( I prefer to use the mini ones)

6 cups of Rice Krispies

1tsp of vanilla

baking sheet

wax paper

Mickey Cookie Cutter ( I use this one http://amzn.to/2gXRR0I that is actually a sandwich cutter)

Popsicles sticks (optional)

melting chocolate, sprinkles and M&Ms for decorating (or whatever you choose)

Melt butter and marshmallows in a large pot, once melted add in vanilla and  then rice krispies. Stir until the rice krispies are fully coated. Because I used a cookie cutter for shapes I spread these onto a baking sheet lined with wax paper. You will need these to be a bit thicker so they hold the cut shape. You will want them to be about an inch thick. Once its spread out let it set for about 5-10 min so you can cut it into shapes. I did this just like I was cutting cookies. Once cut through and the sides  are left roll it back up and smooth it back out. The sooner you do this after they are made the better. The trick to doing it with these was to spray my spatula with cooking spray to keep it from sticking. Transfer all cut out pieces to fresh pieces of wax paper for decorating. I didn’t want to waste the extra which is why I rolled it back out.

If you’re using popsicles sticks you will want to add those in after you have your pieces cut. Melt your chocolates according to the directions. The easiest way is the microwave. To make my favorite M&M’s one just like at Disney I used milk chocolate and M&M’s. Pour melted chocolate onto a flat plate (or melt a pretty deep bowl) and dip the front of the rice krispy treat right in. Have another plate full of M&M’s to dip it in after the chocolate. Then take a spoon and drizzle chocolate over the top of that and set on wax paper to dry. I also melted some white chocolate and did the same thing as well as added Sprinkles on some. You could seriously add anything!

Today is the final date night of my Date Night in series. Its long over due so thanks for sticking around!  These have been really fun to share with you, so this series will be continuing one every month! 

This one was fun. We have recently really gotten into Star Wars, and we wanted to start rewatching again so a Star Wars Date Night In was perfect. When Disney acquired the franchise I decided it was time to at least watch them and to my surprise I enjoyed them. I actually remember seeing one as a kid with my Dad and falling asleep in the theatre. I can follow them so much easier now. 

I fell in love with all the droids in the movies but my favorite is the newest droid the the franchise BB-8. Our cocktail for the evening was inspired by him. Because of our entree choice I went with a Margarita. I wanted a blood orange margarita but had a hard time finding a mix. So I went with Bai bubbles Jamaican blood orange. Here is the recipe I used, it makes 2 drinks. 

3oz tequila

1 oz triple sec 

Juice of 3 limes 

3oz of coconut water 

1 can of Bai Bubbles Jamaican Blood orange 

Mix all the ingredients except for the Bai into shaker, and mix. Pour into glass and top with the Bai Blood Orange and serve. These were really good but I’m not sure it tasted like blood orange. Actually they almost had a peachy flavor which I liked but my husband wasn’t a fan of because he doesn’t care much for peach. 

For dinner we created Dark Side Nachos.  Blue Corn Tortilla Chips, Seasoned ground beef, cheese, sour cream, guacamole, and taco sauce. We are kind of picky but of course you can also add lettuce, tomato, salsa, onion whatever you would like.  I tried to create a storm trooper out of the sour cream and I failed miserably so this was the end result.

We also enjoyed light saber Churros and Edible Ewoks. The churros were the other half of the bag from Trader Joe’s. I used red sugar mixed with cinnamon for these. You can never go wrong with a churro and they were the perfect dessert to the nachos. To add another fun movie treat we enjoyed some “Edible Ewoks.”

 

We made it through 2 of the movies the day of our date. We watched Episode 1 The Phantom Menace during nap time and then had our date night with Episode 2 Attack of the Clones. If we had an entire day we might have been able to make it through several more. We have the others ready to watch as we recorded them all on May the Fourth. We are hoping to get to sit down and enjoy the rest over the next few weeks. Life with a toddler is for sure busy so it may take a while. Which of the Star Wars movies is your favorite?

How to Make the Perfect Cold Brew Coffee at Home

It’s summer and sometimes I just don’t crave hot coffee in the warmer months but yet still want my coffee. Everyone always says, oh just our your coffee over ice. NO, this is just not the same as what you get at Starbucks and I actually think its kinda gross. When I discovered cold brew several years ago I knew that did that trick! In the last year Starbucks has actually released at home cold brew packs. They are really great, however at a $11.95  price point to make 2 pitchers it still wasn’t as budget friendly as I wanted it to be though I do still buy them on occasion. If you want to go that route however you can find them here. 

I started reading up on the cold brew process, looked at special pitchers and things and decided I would just make my own. It it actually really simple and only take a large jar, mesh strainer and cheese cloth, most items in which I already had at home. 

I’ve been using the Seattle’s Best Dark Roast and we have been really big fans of it, but you can use any brand you choose. For us we like darker more full bodied coffees. 

Pour your coffee grounds into a large jar. You will want a jar that can hold about 160-200oz. I’ve been using already ground coffee but if you buy whole bean don’t grind it super fine, leave it more coarse it will work better. After coffee is the jar add 10.5 cups of water and stir. The coffee likes to build up at the top so you need to mix it around. Place jar, closed in the refrigerator for no less than 12 hours and no more than 24.  

Once coffee has set overnight you will need another container to strain it. I use a large bowl that my strainer fits nicely on. Place strainer on bowl, and then top with 2-3 layers of  your cheese cloth. Begin to pour contents of the jar slowly  into the strainer, allowing the liquid to seep through. I sometimes have to stop half way and empty my full bowl. You can push and squeeze the coffee in the cheesecloth to get in any extras. Pour your liquid into an airtight container. I use Mason jars. 

This is is a coffee concentrate so unless you love super super strong coffee you will want to make sure to mix with water. We drink this every day so I like to make pitchers of it. You can also make it by the glass. My concentrate filled 4 of my mason jars. 

To make a pitcher I poured 2 Mason jars of the concentrate into the pitcher and added equal parts water. If you still feel that’s too strong or not strong enough you can do less or more. One batch I added more because it tasted extra strong. 

The concentrate can last about 3 months if sealed in your fridge. If you make a pitcher it’s good for about 6-7 days. It does tend to separate some so I stir it good each morning. I like to enjoy it over ice, with stevia in the raw and Califia Farms vanilla almond milk creamer.

Dairy Free Dole Whip Inspired Popsicles

So here I am again with another popsicle recipe! Popsicles have been a saving grace through toddler teething and these already hot summer days. They seriously make my child so happy. When we are at Disney I love to a Dole Whip or Dole Whip float is my absolute FAVORITE treat, and my favorite part is they are dairy free. With a daughter that has a dairy allergy when I decided on these Dole Whip inspired popsicles, they had to be dairy free too. We had tried some homemade dole whip recipes so those helped create this inspiration a bit.

So here is what you need:

1 bag of Frozen Pineapple

1 can of coconut cream

12 oz of pineapple juice ( I used 2 of the small size cans like these)

1 – 2 TBS of Honey or Agave Nectar to taste

Popsicle Molds


 

Use a blender and add in frozen pineapple, pineapple juice and the coconut cream. You could also use a large  can of pineapple with the juice if you wanted I just don’t love canned pineapple. Once it is mostly blended add in honey or agave nectar ( I used agave and did 2tbs, I tasted until it was just right).

After all ingredients are blended together and consistency is to your liking pour mixture into your popsicle molds. Let the popsicles freeze for at least 24 hours. I had to run under warm water over them get them out. I have a small skinny freezer so it was easier to wrap in wax paper and store in a  freezer bag. My husband and I even used them in our own version of Dole Whip floats on our Magic Kingdom Inspired Date Night which you can find here.These made 4 of the bigger popsicles and 8 smaller ones, and left enough for my daughter to drink like it was a smoothie. If you are limited on popsicles molds you might want to cut the recipe in half.

These don’t taste just like my beloved Disney Dole Whip however they do hit the spot. Any recipe I have found for Dole Whip just isn’t the same but at least they can fill the void in between trips. You will get a bit of a coconut flavor but I honestly couldn’t tell all that much. These went fast, and yet again I can’t seem to keep any popsicles we have been making stocked in the freezer. I’m thinking about trying these subbed with other fruits, maybe some strawberries. What do you think?

I can’t believe we are already on week 3 of  my Date Night series! It has really been so fun and this weeks was no exception. One of our absolute favorite things to do when at Disney is eat. Ya we love the food. We used to head out after to work to the Magic Kingdom for some Casey’s mini corn dogs, dole whip floats, and other things get a spot for the night time parade and then watch Wishes. We would literally didn’t even leave the Main Street area. While I could not completely recreate this exact date you better believe I did the best I could!

The first thing I wanted to figure out was a fun activity to add in other than just eating. I remembered we had Disney Scene It game ( you can get yours here) , and I knew that trivia was the perfect addition to the evening. While Hub Grass was not really a thing when we lived there, it is now so the best I could do to recreate this was a picnic on the ground with a green ( ya I know it’s mint green) blanket.



Casey’s Corner mini corn dogs are my favorite, even though I sure do miss the “plastic” cheese that made them taste even better! While I could have made them myself and they would have tasted much better there were just other things I wanted to make. Also I am a toddler Mama my time is very limited. The nuggets we used are just the State Fair brand mini corn dogs. Trust me they are not Casey’s mini corn dogs and I will be working up a recipe for these puppies so I can have them at home. We also made some shoe string fries to go along with the Casey’s theme.

It’s just not Magic Kingdom to me without a Dole Whip float. I recently came up with a recipe for a Dairy Free Dole Whip inspired popsicle (coming to the blog on Monday) so we did miniature Dole Whip Floats that way. They were so good, and of course easy!

Once I was completing things I realized we had way too many sweet treats! Those seem to be our favorite in the kingdom. We added some delicious homemade Mickey Rice Krispy treats dipped in chocolate and M&M’s just like our favorite from the Main Street Confectionary.

When I was walking through Trader Joe’s one day I came across these mini churros and knew they were also perfect for this date night. Of course my husband insisted on some chocolate sauce too. I’m more all about eating them as they are, but to each their own. Also if you love churros these did not disappoint so head on over to your local Trader Joe’s!

Magic Kingdom makes me think of all the Disney classics. Playing the Disney Scene it Trivia game and eating all our favorite Magic Kingdom snacks helped in making it almost feel as if we were HOME. Last Minute DIY Father’s Day Gift

Father’s Day is this weekend and if you are like I am sometimes you are scrambling for a last minute gift. Year after year for holidays I say I will do better and well let me tell ya, it hasn’t changed.  Adding a child to that mix has not helped things at all. I continue to say I’ll do better, sometimes I do but you know what as Mom’s we just do the best we can.

The first idea I have for you is a Star Wars inspired craft with Yoda. For this you will need craft paint in green, brown, black, and white. You will also need paint brush or brushes and a canvas or sturdy paper. I went with a smaller canvas, If you have a young child you will need an incredible amount of patience. Super easy, place green paint on the bottom of the child’s foot and place upside down on your canvas. If the child is old enough let them do the remainder if not the rest is up to you. Paint arms and ears in the green and let dry. Add in some white in the ears, for eyes. Place black dots in the eyes. Use the brown paint to paint the stick Yoda holds. You can use the brown or black to write the words ” Yoda the Best Daddy.” You could also do Yoda the Best Dad in the Galaxy, Yoda the best Dad Ever there are many variations. Once its dry your all done, and have completed a fun father day craft. I put our daughters name and year on the back of the canvas.

 

The second craft is a grill tray. We did this gift last year. I had planned to do a white ceramic tray but I wanted something practical that could be used and also wasn’t going to break. After lots of searching I found a clear tray at Target for about $10. The tricky part is you have to basically do this backwards or mirrored so it shoes through correctly. I so wish I had my silhouette cameo when I did this. If you have one you could so use this and mirror your words. We used a foot print and a hand print for this one. Once I got everything on the tray and dried, I sprayed a clear sealer over the back so  the paint wouldn’t chip. You could also use clear modge podge. If your giving Dad a new grill for Fathers Day this is the perfect addition. My husband got one last year for his April Birthday so we gifted the tray with some new grill utensils.

 

So if your running around looking for a last minute DIY for Dad these are 2 great projects that will be super easy for you to throw together quickly. These gifts are sure to make the Dads in your life smile!

THREE Ingredient Dairy Free Yogurt Popsicles

We are all about some popsicles around here lately  so I have been trying new recipes  once or twice weekly! My Daughter has a milk allergy, and I am mostly dairy free except for cheese and the occasional ice cream because well… With that said  I am always looking for new favorites when it comes to dairy free options.

We have really grown to love the So Delicious Coconut Milk yogurt. They have a good variety of flavors out there, though sometimes they seem hard to find in my market and it still taste good. Actually I think the flavored and sweetened ones are almost to sweet so I opt for the Plain Unsweetened and add to it myself. This also of course eliminates some of the extra added sugars. Its hot out so I thought why not freeze some yogurt into popsicles to make it seem like she is getting an treat at snack time. Let me tell you my daughter was a big fan! These are super easy and took me less than 10 min to make!

1 Cup Unsweetened Coconut Milk Yogurt

1 Cup Fruit of choice

1 Tablespoon of honey

4 part Popsicle Mold ( you may need more or less depending on your molds )


Add all the ingredients to the blender and blend together, this way the fruit can mix in well also. Pour into popsicle molds and pop in the freezer. I decided to do 2 different flavors so I spilt the recipe into 2 blenders. I made one blueberry and one strawberry. This made 1 individual blueberry and one individual strawberry popsicle and I layered the other 2. The layered ones are fun so next time I may just layer them all. You could also mix more than one fruit into the blender. The recipe is so easy to just swap around and try different combinations.

You can pull the popsicles out and wrap in parchment, that way you can use your molds again to make some more with just regular wooden popsicles sticks. I love these Reynolds individual sheets you can find here. One sheet was enough for all 4 popsicles and then I just tossed them in a freezer bag. These sheets are also great to line all your pans when cooking, they fit so perfectly.

After my daughter had her first one she asked for one daily when she got up from her nap. I love that they are just plain yogurt and fruit that she would usually make a disaster with so I didn’t mind letting her have them. They went super fast and I need to make another batch, and she thinks she is getting a special treat!

How to Plan the Ultimate Beauty and the Beast Date Night In

Today marks week 2 of my Date Night in Series. This week my husband and I celebrated our 8th wedding anniversary.  Our Anniversary being this month is what made me decide to do this Date Night in series in June specifically. Since it fell in the middle of the week we decided on a date night in, and to go out and celebrate over the weekend. The date also just happened to be the release date for the Beauty and the Beast live action film to come out on Blue Ray. I saw the movie in theaters but he had not. When  I saw the announcement I knew that  was exactly what our date night in would consist of. Here are some things to do to create the Ultimate Beauty and the Beast Date Night In.

When you think of dining for Beauty and the Beast what comes to  my mind is the Be Our Guest Scene. This is the ultimate scene from the movie and they over exceeded my expectations in the live action film. I knew when planning our menu we had to have The Grey Stuff for dessert. I did this dessert differently in more of a no bake cheesecake type dessert. They were so good, and you can find my recipe for them here. 

So the Ultimate Beauty and the Beast date night needs more than dessert right? Absolutely. If you have ever dined at Be Our Guest at Walt Disney World you would know an appetizer on their menu is a charcuterie board (It is actually called assortment of meats, no cheese but its a charcuterie board.)  This is such a perfect French themed appetizer and so easy to create. All you need is an assortment of meats, cheeses, crackers, olives whatever you want to add. These are typically mostly meats but I change it up. I kept it pretty simple since there was only 2 of us. I went with a fig and honey goat cheese, dried cranberries, salami, and cheddar cheese. We also did some French loaf with Olive Oil. My favorite place to get meats and cheeses is definitely Trader Joes. They have a fantastic selection of affordable cheeses.

We wanted to do a nice dinner so we got some bacon wrapped filets, and asparagus for the main course. I suppose pommes frites would have made it a little closer to the steak on the Be Our Guest menu but not everything needs to be perfectly the same. Another great option is a Croque Madame, Cheese Soufflé, or even FrenchOnion Soup. Make this night you own, its is totally up to you but the theme is part of the fun!

We decided to set up a little cozier on the coffee table instead of setting at the dinner table. It made the date itself feel more intimate rather than a big table for only 2 people. You could even picnic on the living room floor! I grabbed disposable plates that were a little more fun at Target because I don’t have fancy plates, fun napkins, and my ice bucket for the wine. It is really simple to not only make this themed but also affordable for very little. I even created a small menu for the evening.

After our daughter went to bed my husband got the grill going. I got everything else set up, including a bottle of bubbly. (Prosecco we aren’t big champagne fans) We dined, and chatted and watched the new movie and just enjoyed a quiet relaxing evening together with very little clean up.

Remember how important it is to make the time to Date Your Spouse. The last few weeks have been crazy in this house. My husbands business travel, toddler changes, among other things have made for little time together. However one thing remains constant, we do everything we can to make a date night in happen to reconnect since we cant get out as often. However I sure cant wait for us to get out on an actual date this weekend!

“Grey Stuff” Inspired No Bake Cheesecake

 

The Live Action Beauty and the Beast movie comes out on Blue Ray/DVD today! If you have yet to see it go out and get a copy because Disney did an absolutely amazing job with this LIVE action remake of an animated classic. You can order it here. I also happen to be celebrating my 8th wedding anniversary with my husband today so I have a little Beauty and the Beast date night in planned for the evening. I am excited for him to see the movie for the first time.

With the Beauty and the Beast theme in mind I wanted to whip up a dessert for the evening. Of course the “Grey Stuff”came to my mind but I wanted to play a twist on it a bit. After much thought and looking through my dessert board on Pinterest to see if anything gave me that inspiration, I decided on a Grey Stuff Inspired No Bake Cheesecake.

This was super easy to make, and I really enjoy the flavor of it more than the cool whip flavored recipe that is floating around, and is used in the park.

Here is what you need:

18 Oreos

10 oz of cream cheese softened

1.5 oz of milk ( I used Ripple Milk( dairy free(

1 packet of Simply Jello Vanilla Pudding

wine glass, jars, or whatever you would like to serve it in

Lay your cream cheese out to soften. Mix 1 cup of the milk with the pudding mix until it thickens, then add in  12 of the crushed Oreos. You can crush Oreos by placing in a baggy and using a cup or rolling pin. For the first 12 I left the cream in the center. Mix together. Remove the filling from the remaining 6 Oreos and add to the mixture, with the cream cheese. Mix all together and then refrigerate for one hour. Crush the remaining 6 Oreos, divide and place in bottom of your serving dish of choice. Top with the cheesecake mixture.

You can spoon it in or use a pipping bag which I found much easier with using wine glasses. Place back in the fridge for a few hours before serving. Mine made these 2 huge wine glasses and 2 small cheesecakes, which we enjoyed as soon as they were set. You could definitely get 6-8 servings out of this depending on how you portion them.

Pop in the animated classic or the new LIVE action film, and enjoy this tasty treat with the entire family, or just your significant other!

Today starts my Date Night In Series.  Dating your spouse is so important! When you add a child into the mix, the dynamic of things change. Those weekly date nights, time alone with just your spouse become few and far between. By the time bedtime rolls around for the kids you are just plain exhausted. Budgets can be tight not allowing for a date night and a sitter, and even schedules can get crazy. However you can’t let that foundation you set for your marriage fade. That is why date nights even if they are not out of the home are so important.

We are lucky that we have grandparents that watch our daughter about once a month so we can get out. Otherwise we would not have nights out very often at all. Not everyone has that option, and lets be real leaving a young child with a sitter is hard. Because of this and our need to make sure we are creating that time more than once a month we started Date Nights In at our house.

I am not talking always starting up Netflix and getting cozy on the couch more often. I am talking really creating a night where you can talk, dream, and inspire each other and have that one on one time without the distractions. That can even be tough on a real date night out. Find things to do that maybe take you back to things you used to love to do together.

I love to create things with a theme.  These date nights at home give me the ability to do so. When my daughter is old enough to watch and enjoy these things I can see many family themed date nights with movies in our future. I love to plan also, and as a Mom I’ve lost the ability to be creative as often as I would like to be so this gives me the ability to do it a few times a month.

A lot of this all started when I created our 12 Dates of Christmas.Something that has been a tradition of ours for the last 6 years or more. I’ll share more about that when Christmas is closer. I’ve been picking my brain for sometime about the things we loved to do and a lot of our most favorite dates night take us back to Disney Date nights from our time in Florida. The first date night in My Date Night In series, is Toy Story themed.

When we lived in Florida we absolutely loved hitting up the parks for really fun yet simple date nights. One of our favorites was to hit up Hollywood Studios for Pizza Planet and Toy Story Mania. (It was best during the non busy times.) Of course we would hit the other parks too. The goal was to create that at home for us and I did just that!

So the making of this date night was combined of homemade pizza, a Sheriff Woody inspired drink we called ” There’s a Snake in my Boot”, White Chocolate Chex Mix, and the Nintendo Wii Toy Story Midway Mania game. We also decided to pop in Toy Story 3 when we tired out from the game.

The Sheriff Woody inspired drink was actually fairly simple. Add 1.5 oz of Bourbon into a cup, top with  Ale 8 One which is a soda from Kentucky that is kind of a mix of Sprite and Ginger Ale. You can find it here. The glass bottle is better if you just want to drink it but we stock up when we go to Kentucky. These are a tad pricey to order online but you can sometimes find them at a local Kroger or Harris Teeter. Even Cracker Barrel sometimes has them as  they have started to expand outside of Kentucky! Add a few gummy worms and you have a “There’s A Snake In My Boot.” If you don’t have these just use ginger ale.

We had the best time being competitive with each other playing Toy Story Mid Way Mania. Sometimes it is easy to forget how much fun you can have. For the dinner portion we decided it would be a non family dinner  night. We were more than ok and we would have dinner just the 2 of us after our daughter was in bed. It was the perfect time for conversation which does not happen much at dinner anymore. We are both are lucky enough to eat while trying to make sure our daughter is fed, not attempting to find a way out of her high chair, or dumping her plate on the floor.

There are so many ways you can create these great date nights at home. Most of this one with our grocery budget or things we already have in the house so this can definitely be done on a budget. Make sure to stay tuned as more Date Night In’s are coming every Friday in the month of June!

Fresh Fruit & Coconut Water Popsicles

Summer is  here, and that means pool days, outside fun, popsicles and ice cream! I want my child to enjoy all the fun that life and summer has to offer.  However I want to cut out some added sugars if and where I can. Trust me when I say I am not a perfect Mom by any means. These popsicles are just perfect for that!

We love Coconut Water in this house. The regular one and the pineapple flavored one. I had popsicles molds to try some different recipes through the summer and I thought why not use Coconut water as a base, and from there these popsicles where created and my sweet tiny human loves them.

NEED:

Coconut Water- amount will depend on your molds

Fresh or frozen fruit

Popsicle Molds ( You can find them here or also these that are disposable. )

I had tons of fruit in the fridge so we used pineapples, strawberries raspberries and black berries. Start with chopping up your fruit. I chopped mine up pretty small because I wanted my toddler to be ok with it, and my molds were pretty small. New molds have been ordered for more popsicles!

Add  fruit into each one, then coconut water,  more fruit at the top. Take a utensil and mix them a bit so hopefully the fruit will  spread out. It really did not take a whole lot of fruit to fill these guys up pretty well. After you fill them up, add in the sticks and they are ready to go in the freezer. Make sure to freeze them for a good 24hrs.

Grab them out of the fridge on a hot day for a yummy treat and enjoy. These are not only a much healthier option, but they are also super hydrating because of the electrolytes in the coconut water. Also Mamas out there they are so great for teething. We absolutely love these popsicles and I can’t wait to try lots of new fun recipes this summer, and of course I will be sharing them!

The summer season is officially upon us with Memorial Day this weekend. That means, cook outs, family events,  and pool days are finally here! That also means you are always on the hunt for new things to bring to the cookout that people will enjoy. This treat today can be done so many different ways. I discovered this at an Easter event for my MOPS group and I have seriously craved it ever since because sweet and salty always win right? I made it this past weekend to try out on my husband because it kinda fit the theme of our Date Night In. ( Date Night In Series coming June 2nd!) However this one is perfect for Memorial Day 4th of July, and can easily be changed up for any holiday thanks to the fact that M&M’s come in different colors for various holidays.

 

So here is what you need:

2 cups pretzels

1 bag of popped white popcorn

1 package of white melting chocolate

1 bag of M&M’s the festive ones of course!

2 Cups of Chex Cereal

Sprinkles (optional)

Wax Paper

To start you want to pop your popcorn. Then you want to melt your melting chocolate. I used the Ghirardelli melting chocolate, but you can also use the almond bark melting chocolate. I like the taste of the Ghirardelli much better. I poured the chocolate into a bowl and melted in the microwave per the instructions on the bag. (I only did half the bag because I ended up only making half the recipe. It makes a ton and even making a half batch we threw some out) Once your popcorn has cooled and your chocolate is melted, add pretzels, popcorn and Chex into a large bowl. Pour melting chocolate over mixing it up and then start adding you M&M’s. I made the mistake of adding the M&M’s with all the other items and the kinda just sunk to the bottom of the bowl so I don’t recommend that.

Once you have it all mixed together good spread the mix across a piece of wax paper on a sheet pan. Then top with sprinkles if you choose. Let dry for at least 45 min to an hour. Once it is dry you can break it apart into little pieces to serve. If it has not dried well it wont break apart that great so give it ample time to dry.

If you are making this to take somewhere I would recommend to do so the day of, or at the earliest the night before. The popcorn can get stale pretty quickly. This Chex mix can be done in so many different ways. I was thinking the Mini Cadbury eggs in place of M&M’s at easter, candy corn for the fall/Halloween ( though I am not a candy corn fan really), adding crushed peppermint on top instead of sprinkles at Christmas time. The options are endless to theme it to any holiday, birthday party, or event. It would even be super cure individually wrapped in goody bags. 3 Reason to Love Epcot International Flower and Garden Festival

 

 

 

 

I have always loved Epcot’s International Flower Garden Festival, I even got to work it one season of it on my college program and worked in the first ever speciality booth. Years after that they kept adding them and adding them into what it is today. I’m happy our trips have fallen during the festival and this year I fell even more in love with it each year. I love seeing all the bold, bright, vibrant colors and flowers through Epcot. They seriously do the most fantastic job. The picture below is one of my favorite spots in the festival. Here are 3 reasons to love it.

1.The Special Topiaries

The topiaries are so fun to see each and every year. They have been enhanced and changed a bit over the last 8 plus years I have been visiting the festival and they just don’t disappoint. This year I absolutely loved the Beauty & The Beast ones, mainly because everything was all about the Beauty & The Beast movie coming out and they just took me back to my childhood. These have been around for a while but this year they just really hit the spot.

 

I also loved the Peter Pan topiary. Again this has been around for a while but I don’t recall it always being on top of the United Kingdom building. ( it could have been that way for years and my Mom brain just doesn’t work, there were 3 years in a row I wasn’t there during the festival)

My absolute favorite and one we will continue to hit year after year is the Lion King. We got a picture there last year on my daughters trip and one again this year to compare. I hope we can do this for years to come, though Daddy may not be able to hold her up like that forever.

2.  The Play Areas & Children’s Activities

This year I found a whole new love for these play areas. Last year we were not old enough to enjoy them but this year they were life savers with an extremely active at the time 15 month old. There are 3 play areas one along the Imagination walkway from Future World to the World Showcase called Music Melodies Play Ground, a small area in-between France and Morocco, and one that sets right behind Mousegear, along the Test Track Walkway called the Road to the Florida 500.  There is also an egg hunt you can do, as well as fun activities at each country at Kidcot where your children can travel the world and get a stamp at each country. ( Kidcot is available year around but the offerings can change a bit from season to season.

We spend a lot of afternoons and evenings at Epcot on our visits so we visited the Music Melodies play area few times and my daughter had a blast. They have nice shaded areas for Moms and Dads to sit back and relax too.

 

The small play space in between Morocco and France was fairly small but it was a great spot to run off some energy.

Our favorite of the 3 was definitely the Road to the Florida 500. While it wasn’t hidden necessarily it was not so out in the open that tons of people were stopping, and it was super shaded which is always great! We wish we would have explored this gem earlier in out trip.

The front of the area was themed super cute as well for the upcoming CARS 3 movie.

3. The Food Booths

To be honest as much as I love all the food booths I only stopped twice this last trip and both times for drinks. On our previous trip in November it was Food & Wine Festival and we snacked so much and tried so many things that I barely had room to try some of my favorites. However I will say I love love love the fact that they added all the booths into Flower and Garden Festival several years ago because they were so needed. My favorite booth is the Pineapple Promenade, I love all things Pineapple especially Dole Whip and there they have Dole Whip with rum. I like the Coconut Rum best. This year I had to try the Pineapple Mana beer from Maui Brewing Company and oh how I wish I could find it at home.

There are so many other great stops through the World Showcase for drinks and food galore during the Flower and Garden festival to check out.  You can even pick up a passport and get a stamp at each country as you go through. There are 15 different Outdoor Kitchens as they call them.

 

There are many other things to do at the Flower and Garden Festival. There are great photo opportunities, workshops, The Garden Rocks Concert Series, tours, special merchandise and more. You can actually download the Festival Passport here.

 

The last day for Flower and Garden is Monday, May 29th. As with anytime at Disney but especially Epcot during festivals the weekends are much more crowded.  There are 2 more great Epcot Festivals to look forward to this year as well. My favorite the International Food and  Wine festival which starts even earlier this year on August the 31st and runs through November 13th, and Holidays Around the World November 24th – December 30th.

The warm weather sets in and I honestly just crave fresh fruits. I have a bit of a sweet tooth and fruity things tend to help settle that a bit If you follow me over on Instagram ( and if you don’t you should at @magicallymegan) You would know I have found a new love for Acai Bowls. There is a new or new to me local food truck that has made me fall in love with this healthy and delicious treat called Buoy Bowls and if you’re in the Triangle area of North Carolina you should definitely check them out. They are out my way once a week so we have made it our weekly Thursday treat. They are so good even my one year old loves them.

I find myself craving these many other days of the week as well, but I can’t often drag my toddler to the other side of town, and well they don’t really fit into my Mom budget more than once a week so I have started to create them at home. It is fun to change-up the way you mix things in, the fruits you top them with etc.. Today’s recipe is my favorite one to make at home. You will need Acai packets ( Sambazon are my fave and can be found in the freezer section at most groceries) coconut water ( you can also use almond or coconut milk but I prefer the coconut water) , a banana, a little frozen fruit, some granola, and fruit for topping.

 

Run your Acai packet under water to get it break and add to blender, then add 1/4 cup Coconut Water, about 1/4 frozen fruit and half of the banana. Make sure your banana is at the bottom of the blender, I add my banana  last because the top is the bottom once I flip my blender. This helps everything else blend easier. Pour the mixture into the bowl, top with the granola, and then the fruit and enjoy.

 

 

Acai has tons of greats benefits, one being an antioxidant, so its great for heart health. They can help boost your energy and even your immune system. So head to the store and buy some Acai packets to enjoy this delicious healthy treat all summer long, and find a local place that makes them and enjoy that way too!

6 Reasons a Walt Disney World Annual Pass may be right for your Family

My family and I love to go Disney! There are a lot of reasons but here is a few. It is our second home, I was a cast member there for 4 years, we got engaged there, and it is just the perfect place for a fun family vacation. Being a previous cast member I know a lot of the ins and outs, tips and tricks of  Walt Disney World even though it has been 4 years since I worked there. We visit frequently, I read Disney Blogs on the regular and much more to constantly stay up to date. This past year in November we decided it was time to get a Walt Disney World Annual Pass. We have been blessed with many trips to Disney for cheap thanks to Disney friends but with a child we needed to be able to have more flexibility and plan on our own.

 

So is a Walt Disney Word Annual Pass right for our Family? Here are 5 reasons why it might be.

 

  1. You have a child under the age of 3 (Disney with young children – Another post for another day)

 

Our daughter is only 1.5. She has been to Disney 3 times already. We are taking extra advantage of it since we don’t have to pay for her right now, as our ability to go more often may change once she turns 3. (We hope not though.) At Disney 2 and under are FREE. No ticket required, no dining plan or meals have to be purchased, we can even still get a King size room. She can get her own plate at character meals at no charge, and eat off ours at others. However, she is an eater so we do buy her meals sometimes. This just makes things that much easier. I know it seems so young for a child to go to Disney but its free and they may not remember but you will!

 

  1. If you plan to go for more than 10 days in a calendar year it may pay for itself

 

When we got our pass in November we actually got an extra month free which gave us 13 months to use our pass. We have already been for around 14 days and the pass has easily paid for itself and then some. Price compare the options, especially if you like to park hop like we do. Also annual pass holders get room, food and merchandise discounts so that adds more savings.

 

  1. Memory Maker

 

This can be confusing to some as its listed as Photo pass under the pass holder perks, but it’s the exact same thing as the memory maker. It is one of my favorite perks of the pass. If you’re a Florida resident not every pass comes with this, but it is worth it for one person in your party to have the one with photo pass for the perk alone. Memory Maker cost $169 a trip, $149 if booked in advance. Over 2 trips that’s $300 or more you would pay for it close to half the cost of a pass. I wouldn’t do a trip without it, it is worth every bit!

 

 

  1. Free Parking

 

If you ever decide to go and stay off property, your parking with an Annual Pass is FREE! Parking is crazy expensive at $20 a day. Our most recent trip we stayed off property ( not my favorite thing, but we had a good deal!) and the pass saved us $140 in parking fees we would have paid.

 

  1. Discounts & Perks

 

Pass holders save on rooms, dining and merchandise. Room discounts can be up to about 30% off depending on the type of the resort. You receive 20% off merchandise and 10-20% off at certain food and beverage locations. We have yet to use the room discount but have easily saved upwards of $100-$150 from dining and merchandise discounts. You can even use your pass holder discount on the shop Disney parks app. Also just this year they have added special pass holder entrances. It was so great to skip the line at the turnstiles on the early mornings.  Who doesn’t love a discount, and good perks!

       6. Special Events and Merchandise

There are so many great special events throughout the year at Disney. From Epcot’s Flower and Garden Festival, Food and Wine Festival, Mickeys Not So Scary Halloween Party, Mickeys Very Merry Christmas Party, Holidays around the World , to the New Festival of the Arts Disney always has something fun and new to offer! The Fall and Christmas are one of our favorite times to visit, and no it never gets old! With an annual pass you can experience it all, and there is always special merchandise just for annual pass holders.

 

As I mentioned we have already been 14 days since our first day of use in November. The park days alone have already paid for themselves and then  some based on what we have paid for 2 different trips worth of 7 day park hopper tickets. Because we got 13 months at time of purchase we plan to get one more week trip, and hopefully a long weekend or 2.

Do the math and the research and see what works best for your family. You could take one trip with your pass in 2017 and one in 2018 before its expiration saving you on trip for the following year. I think so many people don’t realize this is even an option.

Annual passes may not be the best option for every family depending on how often your family likes to make the trip. Sometimes we like to be spontaneous and plan a last minute little get away. That’s not easy for everyone to do, but if you can sometimes it is fun to fly by the seat of your pants. Happy Disney planning!

Who loves a good deal? I mean we all love Target right? Seriously we spend so much money at Target each month between diapers, the special non dairy milk my daughter drinks, household items and well all the other random things you find at Target that you may or may not need. I also grocery shop there on occasion since we have Super Target near by.

Finding more ways to save and get FREE things makes Target that much better.   The first way to save at Target is with the Red Card. Now I am not saying go get a credit card, ( you can if you want too) what I love about Target is they offer the debit card option too! You save 5% every single time you use your red card in store or online. You also receive an extended return time frame, and free shipping on online orders. Every so often they also send some good coupons just for red card users. The debit card connects right to your personal bank account so if you don’t want to go open a credit card and are a frequent Target shopper this is the way to go. We finally got the debit card and when we started saving money each trip we wondered why the heck it took us so dang long! When you are saving a couple extra bucks a trip it really adds up over a year. Combine other coupons you may have, in store specials, and cartwheel and your savings really add up. For example a few weeks ago Honest Company diapers were buy one get one 50% off which made 2 packs around $38, then cartwheel had 10% off Honest Company products. Then you add another 5% with the Red Card and that made them about $33. One box is $25.99 regular price so this was a fantastic way to stack savings together! We typically use Babyganics or Honest Company so I watch for these type of sales on these diapers often, stacked with other deals.

So I mentioned Cartwheel. I’ve had Cartwheel for sometime but have really learned to utilize it so much better in the last year. If you are not familiar with Cartwheel it is an app specific for Target. The app offers certain percentages off of certain items. I see the percentage range anywhere from 5-50% off an item. New things can be added daily and when you add things you can see when that offer expires. You only get so many slots to add offers on cartwheel and the more you use the app with the offers you earn more spots to add additional offers. When I first really started using it I would have to delete offers sometimes for something that had better savings and sometimes because I wasn’t going to use it that trip.  I typically will skim through the app before I go. Its divided in categories so if you know what your going for that helps. I love now that I can scan items from my phone while in store to see if there is an offer for that item available. Often Target has signs posted of more popular Cartwheel deals. During the holidays they ran some really great offers that sometimes only ran for 24 hours. I love saving extra money, and saving an extra $10  or more sometimes on a trip makes me feel much better.

In combination with Cartwheel is a newer service called Red Perks. This used to be a separate app but is now combined into the Cartwheel app. Not all Target areas have this perk just yet, but I have to say it is one of my favorites. I love that the 2 are combined now also so the cashier just has to scan one bar code at check out. So what is Red Perks you ask? With Red Perks you earn 10 points per dollar spent in store. Once you hit 5000 points you get to choose a perk. Used to it was a 5% off shopping day so it didn’t appeal to me all that much but I still used it. Now they have a list of FREE items you can choose to use your perk on. I have gotten FREE toys, a skillet, a SIP water bottle ( these retail for $25), jeans, and even pajamas. I always try to use my perk on something worth my wild. For example I have seen a bag of chocolates on there. I would rather spend the $3 on the bag of chocolates if I want them and get something that is a little more costly instead. If you are not using Red Perks you should check to see if its available in your area.

Another great perk is when Target has gift card offers when you make certain purchase amounts. For example recently there was a coupon out that you got a FREE $10 gift card for spending $50 on groceries. I ended up using this deal twice in the time it was available. These are the kind of deals that make me do my weekly grocery shopping at Target. I mean that was a FREE $20 to spend at Target that I was going to spend anyways on groceries! To top it off of course I had Cartwheel Deals and also got my extra 5% from my red card. The way to really save is to scan this coupon prior to cartwheel in case you don’t spend the $50 dollars after cartwheel discounts. This wasn’t really an issue for me because who gets out of Target without spending $50+ anyways!

Cinco De Mayo is just around the corners so what is better than a good Margarita recipe?!  In college I loved a good margarita. Mostly frozen ones. I remember my girlfriends and I making them on many many occasions. These days, I would much prefer a nice on the rocks Margarita with a top shelf tequila. The kinds I couldn’t afford in my college days. With warmer weather here and summer just weeks away I wanted to create a little bit healthier ( I didn’t say it was healthy, just healthier) that would be a great summer go to for those Taco Tuesdays, or get togethers with friends.

I have been super obsessed with pineapple coconut water lately. Lets be honest, I am just obsessed with all things Pineapple period, enough said.  I cant seem to like drinking regular coconut water, so when I saw this I knew I had to try it. It was love at first sip.  When I wanted a new margarita recipe I knew I wanted to use it in this! However you could totally use regular coconut water as well, I don’t think it would change the taste. So here is what you need.

 

1 bottle 16 oz bottle of Coconut water

1 Cup Orange Juice ( I used pulp free Simply orange)

1 cup water

1 Cup fresh squeezed lime juice

1.5 cups of a white tequila ( I used 1800 Silver)

1/2 cup of Triple Sec

Agave to taste


Mix all ingredients together in a pitcher and let it chill. To be honest the longer it sits the better it gets. This recipe can easily be doubled for a larger party size pitcher but it made about 6- 80z servings. Rim you glass with salt and fill with ice. Pour in the margarita and enjoy! Welcome to Magically Megan! If you know me or have followed me for a while you know this isn’t my first rodeo at blogging. The truth is in the past I had no clue what I was doing. So, as they say the 3rd time is a charm! Thank you for continuing to follow.

The last 6 or so months blogging has been on my heart. For a long time, it has been something I have wanted to do. It was also something as a Mom I wanted to do to have something that was just for me. A way of finding myself again. You see sometimes as Moms we tend to lose ourselves a bit. Being a Mom, Wife, maybe even a full-time employee, yes they are all part of our description but we are still so much more. For me as a stay at home mom I find that some people give us all the credit, and some people think we stay home all day and watch TV, which is the furthest from the truth. In the days of constantly feeding, diaper changing, cleaning up after, keeping a household in order, possibly working a full -time job and many other things ( things I wouldn’t change for the world) a Mom should find something just for her. Maybe its blogging, maybe it’s an at home business, maybe its teaching a few fitness classes at a local gym each week. Whatever it is, while being a Mom is the most important, rewarding, hardest job we will ever have it is ok to step aside and explore who you are outside of being a Mom. This very statement was made at my first ever MOPS meeting this past September and its stuck with me ever since, it has just taken me pretty much the entire MOPS ( Moms of Preschoolers) year to put it into action.

 

 

So, with the brainstorming after that meeting I knew blogging was where I wanted to go back to, that was where I was going to step to the side a bit and do that exploring.  With that I bring you Magically Megan. A Disney & Lifestyle blog. I will share many things from motherhood, to home décor, recipes, money saving tips, lots of Disney goodies and so much more! I do hope you will follow along.
